Brigadeiros (Brazilian Chocolate Truffles)
1 can of sweetened condensed milk
3 tbsp. heavy cream
¾ cup of 60% chocolate (chips or bar)
2 tbsp. cocoa powder
1 tbsp. vanilla
1 cup of chocolate sprinkles
Stir all the ingredients (except the sprinkles) and combine them over medium heat until it’s a thick blob-like texture, (about 10 mins), and make sure to NOT overcook. If you do, the brigadeiros will become grainy and bland and very chewy and tough. Afterward, place the brigadeiro mix in the fridge for about 3 hours. Butter your hands and then scoop the mixture to form balls and roll. After the balls are rolled, place the sprinkles on a plate and roll the balls until they are coated with the sprinkles. The brigadeiros can be served immediately or kept in a refrigerator for up to three days. Use them as part of a dessert buffet or as a stand-alone treat.
Makes 15-30 truffles depending on the size.
